In a kitchen producing about 2,500 meals each day for kupuna and keiki, the Lanakila Kitchen team still makes space for new ideas. One recent experiment has turned into a popular bakery item with a bigger purpose behind it.

Ube mochi bites began as a concept developed by Kitchen Manager Junior Gabriel, inspired by the team’s bestselling ube scone. He wanted to explore a new texture and flavor profile while staying rooted in ingredients customers already love. The result pairs a crisp exterior with a soft, chewy center, and it has quickly earned repeat fans.

Wilma, a Baker who has been part of the Lanakila Kitchen team for 8 years, shares, “It feels so great to see customers enjoying the mochi bites. I know they really like it, and I did a good job making it.”

Ube mochi bites are available at Lanakila Pacific, the Lanakila Pacific Cafe at the Prince Kuhio Federal Building, and at Don Quijote locations on Oahu.

Reflecting on her experience, Wilma says, “Every day, I help make sure our products are ready to go out for delivery and I feel wonderful and special to be part of this team.”

Beyond the bakery case, each new product supports job training and employment for people with disabilities. From recipe testing to production, team members build real-world skills in a fast-paced kitchen environment while gaining confidence and independence.

Junior credits the team behind the scenes for helping bring the idea to life. As Lanakila Kitchen continues to expand its menu, it also expands pathways for training, growth, and long-term employment across food service roles.
