Guided by their Turkish heritage and deep appreciation for Hawaii’s farmers, ranchers, and fishermen, Chefs Ahu and Nili create a dining experience that bridges tradition and place. Inspired by memories of gathering around a table filled with meze, this thoughtfully crafted menu pairs the vibrant flavors of Türkiye with the bounty of the islands—from hummus, baba ghanoush, and charred Kula cabbage to lamb tenderloin şiş, Kauai shrimp, and pistachio baklava. Each course invites guests to savor the stories, cultures, and connections that inspire Istanbul Hawaii.
